Chicken kumara noodles


Kumara noodles? I know it sounds odd but

you need to try them, the best way to make

it feel like you are eating more, I only wish

I had of discovered this hack during prep.

This is a super balanced meal with a two

great sources of protein, some healthy fats

and a serve of your daily veggies.

It also provides a good level of fiber (8.4g)

to help ensure you can reach a daily fiber

goal of 25-35g and maintain good digestion.


Use a good non-stick pan so you can cook the onion and chicken without butter. Once cooked set this aside.

Whisk the egg and also set this aside.

If you don't have a spiraliser to make actual noodles you can just grate it.

Chuck the kumara in the pan that the chicken and onion was cooked in, with the garlic, butter and lemon, ensure you keep mixing this around so it doesn't burn.

Once the kumara is soft, take off heat and add the egg, mix through quickly to avoid it scrambling.

Corn just needs to be cooked as per packet instructions before adding to the dish.

Then throw everything together, give it a good mix and serve into two even portions
